½ red onion, diced
½ teaspoon finely grated lemon zest
3 tablespoons lemon juice
½ teaspoon salt
¼ teaspoon pepper
½ cup feta cheese
¼ cup crème fraîche
2 tablespoons fresh dill, chopped (or 2 teaspoons dried dill)
1 tablespoon olive oil
¼ cucumber, finely diced, set aside
4 slices of gravlax or smoked salmon
- Mix together the red onion, lemon zest, lemon juice, salt and pepper in a small bowl. Set aside.
Add the feta, crème fraîche and dill into the bowl of a food processor and pulse until blended.
- Slowly add the olive oil while the food processor is running.
- Scrape down the sides of the bowl and process until smooth.
- Spread the feta mixture on Cult Crackers, add a slice of cucumber, a small piece of gravlax, and top with lemon-pickled red onions.
