Vegetable Soup with Crackers
INGREDIENTS
1 tablespoon olive oil
1 yellow onion
2 garlic cloves
1 head of chard
1/2 cup basil
5 cups water
2 teaspoons salt
White pepper, pinch
Fresh herbs (optional)
Cult Crackers crumbles
DIRECTIONS
- Chop onions and garlic.
- Add 1 tablespoon of olive oil to a medium-size pot.
- Add chopped onions and cook until onions are cooked down.
- Add chopped garlic and stir for 1 minute.
- Add 5 cups of water and bring to a boil.
- Reduce heat to a simmer and cook for 15 more minutes or until vegetables have softened, stirring occasionally.
- Season to taste with salt and white pepper.
- When ready to serve, drizzle each bowl with a splash of olive oil, fresh herbs and Cult Crackers crumbles.
