Vegetable Soup with Crackers

Cult Crackers - Vegetable Soup with Crackers

INGREDIENTS

1 tablespoon olive oil

1 yellow onion

2 garlic cloves

1 head of chard

1/2 cup basil

5 cups water

 

2 teaspoons salt 

White pepper, pinch 

Fresh herbs (optional)

Cult Crackers crumbles

 

DIRECTIONS

  1. Chop onions and garlic.
  2. Add 1 tablespoon of olive oil to a medium-size pot. 
  3. Add chopped onions and cook until onions are cooked down.
  4. Add chopped garlic and stir for 1 minute.
  5. Add 5 cups of water and bring to a boil. 
  6. Reduce heat to a simmer and cook for 15 more minutes or until vegetables have softened, stirring occasionally.
  7. Season to taste with salt and white pepper.
  8. When ready to serve, drizzle each bowl with a splash of olive oil, fresh herbs and Cult Crackers crumbles.
